Ingredients (makes 3-4 burger patties)
- 1 onion
- 3 carrots
- 1.5 cups cooked lentils
- 1/3 cup cooked sliced beetroot (or from the jar)
- 1 egg
- 1/3 raw rolled oats
- 2 tbsp oat bran
- 2 tsp cumin
- 2 tsp coriander
- 1.5 tbsp tomato paste
- 1 tbsp sweet chilli sauce
- 1 tsp salt
- Pepper to taste
- Aubergine
- Rocket
- Feta
- Basil pesto
Method
- Chop and boil the carrots
- Boil the lentils
- Chop the onion
- Blend all the ingredients together
- Pop into the fridge for about 45 minutes. Bake in a preheated oven for 25 minutes and grill for 5 minutes.
- Slice the aubergine length ways and sprinkle with salt. Set aside for 15 minutes. Rinse and bake for 20 minutes each side.
- Top with basil pesto and feta
