Falafel

Ingredients (serves 3-4)

  • 300g cooked / canned chickpeas
  • 2 cloves garlic
  • 1 onion, quartered
  • 1 tsp ground coriander
  • 1 tbsp ground cumin
  • 1 tbsp lemon juice
  • sprinkling of cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp baking soda
  • 1 cup parsley or coriander

Method

  1. Toss it all into a blender and pulse until smooth. Pop into the fridge to set a bit. Roll into balls (the size of golf balls) and put onto a greased baking dish.
  2. Bake for 30 minutes.
  3. Then grill for about 10 min each side until golden and delicious.
