Cucumber and Alfalfa Tortillas

Ingredients

Serves 4

  • 2 cups plain flour, sifted
  • Pinch of salt
  • 3 tbsp olive oil
  • 1/2 – 2/3 cup warm water
  • lime wedges to garnish

For the salsa

  • 1 red onion
  • 1 red chillies (seeded and finely chopped)
  • 2 tbsp chopped fresh dill / coriander
  • 1/2 cucumber, peeled and chopped
  • 2 cups alfalfa sprouts

For the sauce

  • 1 large ripe avo, peeled and stoned
  • juice of 1 lime
  • 2 tbsp soft goat’s cheese / feta cheese
  • pinch of paprika

Method

  1. mix all the salsa ingredients in a bowl and set aside
  2. For the sauce, place the avo, lime juice and cheese in a blender and blend until smooth
  3. For the tortillas, place the flour and salt in a blended / food processor and the oil and process
  4. Gradually add the water until a stiff dough is formed
  5. Turn out onto a floured board and knead until smooth
  6. Divide the mixture into 8 pieces and knead each piece and form a ball.
  7. Flatten and roll out in a 23cm circle
  8. Heat a non-stick pan and cook one at a time for about 30 seconds each side
  9. Spread each tortilla with a spoon of avo, sauce and top with salsa
  10. Roll up, garnish with lime wedges and enjoy.
