Serves 4
Ingredients
- 450 g lean beef rump / fillet / sirloin, cut into thin strips
- finely grated rind and juice of 1 orange
- 1 tbsp soy sauce
- 1 tsp cornflour / maizena
- 2.5cm root ginger, chopped
- 2 tsp sesame oil
- 1 carrot, cut into thin strips
- 2 spring onions, thinly sliced
Method
- Place the beef in a bowl and sprinkle over the orange rind and juice, leave to marinade for at least 30 minutes
- Drain the liquid of the meat and set aside, then mix the meat with soy sauce, flour and ginger
- Heat the oil in a wok and add the beef, fry for 1 minute then add the carrot and fry for 1 – 2 minutes
- Stir in the spring onion and reserved liquid, then cook, stirring until boiling and thickend
- Serve hot with noodles
