Ingredients
- 5 Courgettes, julienne
- 6 Carrots, julienne
- Small cabbage, shredded
- Two handfuls chopped lettuce
- 6-8 cherry tomatoes, sliced
- 1 yellow pepper, sliced
- 1 tablespoon fresh ginger finely chopped
- 1 chilli, finely chopped
- 2 cloves of garlic, finely chopped
- Salt and pepper to taste
- Soya sauce to taste
- Lemon Juice to taste
Method
- Fry courgettes, carrots and cabbage in a tiny bit of canola or olive oil, garlic, ginger and chilli
- Mix all the other ingredients in a big salad bowl
- Add the cooked veggies into the salad bowl
- Add the lemon juice, soya sauce and salt & pepper
- Sprinkle with sesame seeds
