(Practically) Fat Free Chocolate cupcakes

Ingredients (makes 12)

  • 1 1/3 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons salt
  • 3/4 cup dark brown sugar, packed
  • 1/4 cup applesauce (I used Purity)
  • 1 egg
  • 1 egg white
  • 1 tablespoon oil
  • 1 teaspoon vanilla extract
  • 1 2/3 cups skim milk
  • Icing’ sugar

Method

  1. Preheat oven to 180 degrees C
  2. Line 12 muffin cups with paper liners.
  3. Combine flour, cocoa, baking powder, soda and salt.
  4. Beat the next six ingredients until combined, about 1 minute.
  5. Stir in flour mixture alternately with milk until just combined.
  6. Pour batter into muffin cups.
  7. Bake 22 to 25 minutes or until toothpick comes out clean.
  8. Remove cupcakes from pan; cool on wire rack 30 minutes.
  9. Sprinkle with sugar, if desired.
