Lentil and beetroot burgers

Ingredients (makes 3-4 burger patties)

  • 1 onion
  • 3 carrots
  • 1.5 cups cooked lentils
  • 1/3 cup cooked sliced beetroot (or from the jar)
  • 1 egg
  • 1/3 raw rolled oats
  • 2 tbsp oat bran
  • 2 tsp cumin
  • 2 tsp coriander
  • 1.5 tbsp tomato paste
  • 1 tbsp sweet chilli sauce
  • 1 tsp salt
  • Pepper to taste
  • Aubergine
  • Rocket
  • Feta
  • Basil pesto

Method

  1. Chop and boil the carrots
  2. Boil the lentils
  3. Chop the onion
  4. Blend all the ingredients together
  5. Pop into the fridge for about 45 minutes. Bake in a preheated oven for 25 minutes and grill for 5 minutes.
  6. Slice the aubergine length ways and sprinkle with salt. Set aside for 15 minutes. Rinse and bake for 20 minutes each side.
  7. Top with basil pesto and feta
