Chickpea and vegetable curry – Stuffed in a Roasted sweet yellow pepper

Ingredients

  • 1 tin chickpeas
  • 1 onion
  • 2-3 carrots
  • 2-3 baby marrows
  • Tin of tomato and onion
  • 2 tbsp tomato paste
  • 2 gloves garlic
  • Cumin, coriander, paprika, turmeric
  • Salt and pepper
  • Curry powder
  • 2 tbsp chutney

Method

1. Chop the onion and fry in a bit of canola oil or water with the garlic and spices until browned
2. Chop the carrots and marrows and steam unit cooked
3. add the chickpeas, tomato and onion and tomato paste I to the onion and spices
4. Add the veggies into the chickpea mixture

Serve with sweet yellow rice and chutney- delish
Or if you are going carb free, a stuffed sweet yellow pepper, roasted is great.
