Chicken Tikka

Serves 6

Ingredients

  • 450g chicken, boneless, skinless
  • 1 tsp graed root ginger
  • 1 garlic clove, crushed
  • 1 tsp chilli powder
  • 1/4 tsp tumeric
  • 1tsp salt
  • 150ml plain fatfree yoghurt
  • 4 tbsp lemon juice
  • 1 tbsp chopped fresh coriander
  • 1 tbsp canola oil

For the garnish

  • 1 small onion, cut into rings
  • lime wedges
  • mixed salad
  • coriander leaves

Method

  1. In a medium bowl mix all the ingredients (except the oil and garnish ingredients)
  2. leave in the fridge for 2 hours
  3. Place in a casserole dish and baste with the oil
  4. Preheat the grill to medium, grill for about 15 – 20 minutes until cooked, turning and basting 2- 3 times
  5. Serve with garnish ingredients and salad
