Carrot and cumin bean burger

Ingredients

  • 1 medium carrot
  • 1/3 cup oats
  • 1 tin kidney beans, drained
  • 1/2 cup chopped mushrooms
  • 1/2 onion
  • 1/2 red or yellow pepper, diced
  • 1 egg
  • 1 tbsp tomato paste
  • Spices (cumin, salt and pepper, curry powder or garam masala)
  • Garlic 1-2 cloves diced
  • 4-6 giant mushrooms
  • Olive oil and garlic
  • Pesto

Method 

  1. Process carrot and add oats and beans. Pulse a few times.
  2. Add the remaining ingredients and spices.
  3. Process until well mixed but slightly coarse.
  4. Chill for 45-60 minutes. Make 4-6 patties.
  5. Grill until golden brown and turn to cook both sides.
  6. Grill giant mushrooms with olive oil and garlic.
  7. Serve the burger on the mushroom topped with pestoy
