Beef Strips with Orange and Ginger

Serves 4

Ingredients

  • 450 g lean beef rump / fillet / sirloin, cut into thin strips
  • finely grated rind and juice of 1 orange
  • 1 tbsp soy sauce
  • 1 tsp cornflour / maizena
  • 2.5cm root ginger, chopped
  • 2 tsp sesame oil
  • 1 carrot, cut into thin strips
  • 2 spring onions, thinly sliced

Method

  1. Place the beef in a bowl and sprinkle over the orange rind and juice, leave to marinade for at least 30 minutes
  2. Drain the liquid of the meat and set aside, then mix the meat with soy sauce, flour and ginger
  3. Heat the oil in a wok and add the beef, fry for 1 minute then add the carrot and fry for 1 – 2 minutes
  4. Stir in the spring onion and reserved liquid, then cook, stirring until boiling and thickend
  5. Serve hot with noodles
