Asian Inspired Courgette and Carrot salad

Ingredients

  • 5 Courgettes, julienne
  • 6 Carrots, julienne
  • Small cabbage, shredded
  • Two handfuls chopped lettuce
  • 6-8 cherry tomatoes, sliced
  • 1 yellow pepper, sliced
  • 1 tablespoon fresh ginger finely chopped
  • 1 chilli, finely chopped
  • 2 cloves of garlic, finely chopped
  • Salt and pepper to taste
  • Soya sauce to taste
  • Lemon Juice to taste

Method

  1. Fry courgettes, carrots and cabbage in a tiny bit of canola or olive oil, garlic, ginger and chilli
  2. Mix all the other ingredients in a big salad bowl
  3. Add the cooked veggies into the salad bowl
  4. Add the lemon juice, soya sauce and salt & pepper
  5. Sprinkle with sesame seeds
